Blueberry Pancakes

Fluffy Blueberry Pancakes for a Sweet Start

Ingredients:

  • 1 cup all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup buttermilk

  • 1 large egg

  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 cup fresh or frozen blueberries

  • Butter or cooking spray for greasing the pan

Instructions:

  1. Prepare the Dry Ingredients:

    • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  2. Mix the Wet Ingredients:

    • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula or wooden spoon. Be careful not to overmix; a few lumps are okay.

  4. Add Blueberries:

    • Gently fold in the blueberries into the batter. If you are using frozen blueberries, you can toss them in a little flour to prevent them from sinking to the bottom of the pancakes.

  5. Preheat the Griddle or Pan:

    • Preheat a griddle or non-stick skillet over medium heat. If using a skillet, add a small amount of butter or cooking spray to prevent sticking.

  6. Cook the Pancakes:

    • Scoop 1/4 cup portions of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. This typically takes about 2-3 minutes per side.

  7. Keep Warm:

    • As you cook the pancakes, you can keep them warm by placing them on a plate in a low-temperature oven (around 200°F or 95°C).

  8. Serve and Enjoy:

    • Serve the blueberry pancakes warm, topped with additional blueberries, maple syrup, or a dollop of whipped cream if desired.

Note:

  • Feel free to customize your blueberry pancakes by adding a sprinkle of cinnamon, lemon zest, or a dash of nutmeg to the batter for extra flavor.

These fluffy blueberry pancakes are a delightful way to start your day. The burst of sweet, juicy blueberries in each bite makes them a breakfast favorite. Enjoy the homemade goodness with your favorite toppings and savor the delicious taste of freshly made pancakes!
