Overnight Oats with Seasonal Berries

Ingredients:

  • 1/2 cup rolled oats

  • 1/2 cup unsweetened almond milk (or any milk of your choice)

  • 1/4 cup Greek yogurt

  • 1 tablespoon chia seeds (optional, for added thickness)

  • 1 tablespoon honey or maple syrup (optional, for sweetness)

  • 1/2 teaspoon vanilla extract

  • 1/2 cup seasonal berries (such as strawberries, blueberries, raspberries, or blackberries)

  • A handful of nuts or seeds for topping (optional)

Instructions:

  1. Prepare the Base: In a bowl or jar, combine rolled oats, almond milk, Greek yogurt, chia seeds (if using), honey or maple syrup (if using), and vanilla extract. Mix well until everything is combined.

  2. Layer with Berries: Add half of the seasonal berries to the oat mixture and gently stir them in. Keep the remaining berries for topping the oats later.

  3. Refrigerate Overnight: Cover the bowl or jar with a lid or plastic wrap and refrigerate it for at least 4 hours, preferably overnight. This allows the oats to soften and absorb the liquid.

  4. Serve: The next morning, stir the oats. Top with the remaining seasonal berries and any nuts or seeds for extra crunch and texture.

  5. Enjoy: Your healthy and delicious overnight oats with seasonal berries are ready to be enjoyed! Eat them cold straight from the fridge or let them sit at room temperature for a few minutes before eating.

Notes:

  • Feel free to adjust the sweetness by adding more or less honey/maple syrup according to your preference.

  • Experiment with different combinations of seasonal fruits or add a sprinkle of cinnamon for extra flavor.

  • If you prefer a creamier texture, you can add more yogurt or milk.

  • Customize your toppings with sliced almonds, walnuts, pumpkin seeds, or a dollop of nut butter for added protein and healthy fats.

This recipe provides a nutritious, make-ahead breakfast option packed with fiber, protein, and antioxidants from the seasonal berries, making it a delicious and healthy way to start your day!
