Ingredients:

  • 1 pound assorted seafood (shrimp, mussels, clams, scallops, fish fillets, etc.)

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 carrot, diced

  • 1 celery stalk, diced

  • 1 can (14 oz) diced tomatoes, undrained

  • 1 cup fish or seafood broth

  • 1 cup dry white wine

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 bay leaf

  • Salt and pepper to taste

  • Fresh parsley, chopped, for garnish

  • Crusty bread for serving

Instructions:

  1. Prepare Seafood:

    • Clean and devein shrimp, scrub mussels and clams, and pat dry fish fillets. If using larger fish fillets, cut them into bite-sized pieces.

  2. Sauté Aromatics:

    • In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onions, garlic, bell pepper, carrot, and celery. Sauté until the vegetables are softened.

  3. Add Tomatoes and Broth:

    • Pour in the diced tomatoes with their juices. Stir in the fish or seafood broth and white wine.

  4. Season:

    • Add thyme, oregano, bay leaf, salt, and pepper. Stir well to combine the flavors.

  5. Simmer:

    • Bring the mixture to a simmer, then reduce the heat to low and let it simmer for about 15-20 minutes, allowing the flavors to meld.

  6. Add Seafood:

    • Gently add the seafood to the simmering stew. Arrange the different types of seafood evenly in the pot.

  7. Cook Seafood:

    • Cover the pot and cook for 5-10 minutes or until the seafood is cooked through. Be careful not to overcook, as seafood cooks quickly.

  8. Discard Bay Leaf:

    • Remove the bay leaf from the stew and discard it.

  9. Serve:

    • Ladle the seafood stew into bowls, making sure to distribute the various seafood evenly. Sprinkle chopped fresh parsley over each serving.

  10. Serve with Crusty Bread:

    • Serve the seafood stew with crusty bread on the side for dipping.

Enjoy your homemade seafood stew, a comforting and flavorful dish perfect for sharing with family and friends. Adjust the types of seafood used based on your preferences and the availability of fresh seafood in your area.
